Kiss Me I'm Irish

So I played hookie yesterday. My college roommate has lived abroad since graduate school, so we rarely get to see each other. However, she does come through the states at least once a year. We always try to see each other someway or somehow. Sometimes it's just a passing through (Missouri to Texas) lunch, sometimes it's a day or two. Today we enjoyed a two and a half hour lunch and lots of chatting. You know a great friend when you can not see each other for months and pick up like you talked just yesterday. Hopefully we will be able to plan a trip to Malaysia before they move again.

In honor of St. Paddy's Day I cooked an irish dinner. This year I made Shepard's Pie and cabbage. I've never even eaten Shepard's Pie. I found a couple of recipes on Pinterest and tried one out. It was really good. Next time I will put a little more spice.

You start by browning the ground beef in a skillet and adding onions, garlic, paprika, and thyme. When that is cooked down you add peas, carrots, and corn and let it cook for another minute or two. You whisk together beef stock, flour, chili sauce, and Worcestershire sauce and pour over the beef mixture.
 For the potato topping melt cheese over boiled potatoes and add sour cream, salt, and onion powder. Mash until smooth.
 Spread potatoes over beef mixture and sprinkle with more cheese. 
Bake at 375 for 25 minutes. 
 When it comes out of the oven top with parsley. I will definitely make it again and it I won't be waiting until next year.

It's football season and Walmart has all their Razorback merchandise out. I was browsing the aisle the other day and saw these. I immediately thought whiskey! A great way to sneak liquor into the stadium. Of course the back says intended for water only. Yeah right! No one looks at this and says water.

Ballyseede Castle

   Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. The castle has 23 en-suite bedrooms and 3 beautiful private rooms complimented by enchanting formal gardens. To read about the history of the castle click here. We stayed in the Coghill room.   We had a nice view of the gardens. Here are other pictures from inside the castle. We had to have our picture made with the knights.   We Googled and found a restaurant in town that was supposed to be delicious. It was nestled on the shore overlooking the bay.
