Birthday Lake Weekend

Before all of the Covid-19 started, our name was on the lake house calendar. We decided to still go. Since I have been working from home, I left Thursday afternoon. I had cooked my brother dinner and baked him a loaf of bread. I also stopped by my parent's house to give them their loaf of bread and I got a delicious strawberry cake for my birthday. I my have eaten almost the whole thing by myself. Don't judge. It was breakfast, lunch and dinner for a few days.  Indy is not use to me sitting in a recliner. She did not like the fact that she could not sit beside me. After lots of pacing she decide there was room enough fro both of us. I worked some Friday morning. I had three 504 conferences via Zoom and a staff meeting and then went for a walk. It's one hill after another so no running. this is the view I had from the top of one of the hills I climbed.                                 ...

Eli Young Band

Eli Young band was one of the the first concerts Kev and I went to. They were playing at Rev room one night and I really wanted to go. These sweet friends agreed to go with me. (Not pictured Daniel) I would not have made it with the love and support of my friends. They really are the best! I started tearing up when our young came on and Heather reached over and held my hand until it was over. I'm tearing typing this right now.

Highlights from the Week

I have helped our literacy department do inventory all week. That has left little time to do much around the house. Thursday I had our little teacher group from school over for brunch and mimosas. We had a great time visiting. We have tried to get everyone together a few times over the summer. Lilly was assuming her usual position on the couch when I noticed three of her bottom front teeth are gone. I have no idea what happened. She didn't seem to be in pain and her gums didn't get infected, so I guess all is well. Sunset Friday night was gorgeous! I can't wait until we build Kev's shop and have a deck on the back overlooking the pasture. It's always a pretty view. My new boots I ordered!!They are back ordered until September, but  I can't wait to get them!! Sunday I did a little freezer cooking. Hamburger meat was on sale, so I took advantage. I also made a batch of homemade cream of mushroom soup. I'm in love with this stuff and it is so eas...

Happy Birthday America!!

We loaded up this morning and headed to a friend's house for a pool party! This was the dog's first time riding in the new vehicle. Hatfield HAS to sit in a seat. Lilly was fine with laying in the back. Enjoy your 4th and stay safe!

Tomatoes Make Salsa!!

My lug of tomatoes were getting very ripe, so Wednesday after summer school I started making salsa. I use the chunky Salsa recipe out of this cookbook. I puree my tomatoes, so mine isn't technically chunky. I had some technical difficulties. The never been used Kitchen Aide Food Processor we got as a wedding gift didn't work! I tried everything! Good thing someone bought me this mini hand food processor at my Pampered Chef Shower. I didn't think I would use it very much, but It's great for making pico for taco night and sauces. All of the ingredients. For every seven pounds of tomatoes (I made two batches) you need… 10    Anaheim or Poblano peppers (These peppers were big, so I used three of each kind.) 3      Jalapeño peppers 2      cups onion 1/2   cup Cilantro 1/2   cup vinegar 5      gloves garlic 1T.  sugar 1t.   salt (I usually add a little more.) 1t.   pepper I used the mini fo...

Canning and Freezing

This morning I got up when Kev left for work, you can see from the picture that none of the animals wanted to get up. I dropped the recycling off and headed back home to do a little cleaning.  I had to do something with the green beans we had, so I decided to go ahead and can them.  Step 1- Wash them and snap the ends off.  Step 2- Cut them into small pieces.  Step 3 - Boil them for five minutes.  Step 4- Let them sit in ice water for five minutes to stop the cooking process.  Step 5- Fill the jars.  Step 6- Process the jars in a water bath for 20 minutes.  I got four pint sized jars of green beans.  I did the same blanching process with the squash and zucchini that was taking over my crisper.  But I froze it instead of canning.  I absolutely love doing this type of stuff!! It brings back memories of my dad's mom. They lived next door and had a huge garden. I would alw...

My Animal's Lives

It's been a while since I've shared animal pictures. So here you go... Perla playing in the shower curtain. The dogs ready to go visit Kev at the job site. My landlords put the sprinkler by the fence, so my yard can get water. My well just won't put out enough water pressure for long periods of time. Watering the yard for more that 15 minutes in a no go. This is how they help. It was next to the dog pen the other day, so I had two wet dogs when I got home. Lilly loved playing in the sprinkler. Just hanging out on the gutter trailer watching Kev change his oil.

Just Chilling

Lazy Sunday morning. Then hitting up the outlet mall!
