National Waffle Day!!

While scrolling through Facebook at lunch I learned that it was National Waffle Day. Rachel Ray shared several yummy recipes that inspired me. I didn't want to go to the store, so I choose to do a BLT Waffle. I went to Pinterest and searched savory waffles and found this recipe for a spinach and cheese waffle. I just made up a batch of Bisquick waffles (I always substitute homemade apple sauce for the oil.) and added the cheese, spinach, and oregano. Bacon is never enough meat for Kev, so I added ham to his. They were delicious!! We decide to have a monthly waffle night and try out some other recipes.

Projects and Summer Canning

I've felt a little nauseous lately. Saturday night we went to see Jurassic World in 3D and the motion made me a little woosie. Then this morning, I went into summer school, ate my usual breakfast of strawberries and cottage cheese and suddenly felt sick and threw it back up. I walked around to visit some rooms, the whole time feeling yucky. I was sent home to rest. Around noon I felt a little better and was able to keep down a few Triscits.  I got up and started making salsa while I watched City of Ember and Grace is Gone. I wanted a little more flavor and spice this year, so I found a different recipe.   Here is last years recipe. Once again i didn't follow the recipe to a tee. I added Jalapeno peppers and real garlic. I like how it used purple, white, and sweet onions. I also used brown sugar and a little tomato paste. I had eight pounds of tomatoes left after making one batch of salsa and wanted to try something different. I found a recipe for BBQ sauce.   I use...

Recreation of London Beef and Mushroom Pie

While in London I ate this wonderful beef and mushroom pie! I wanted to recreate it and use some of the deer steak in our freezer. I found this recipe . Of course like most recipes I tweaked it a little. I added green peas and left out the celery. I also used pie crust instead of puffed pastry. I made individual ones in these cute Corningware dishes. They were delicious!

The Weekend - Decorating, Cooking, and Yard Work

I've enjoyed Kev not working on Saturdays. We are getting lots done around the house. Of course we could work on the yard everyday and still have tons to do. We are diligently trying to get all of the trees at the bottom of the hill cut up and the limbs burned. Saturday we made two huge piles that are ready to burn. we burned one Saturday night and the other is still waiting. There are several piles of logs that need to be loaded up and taken to the log pile. The wheelbarrow is not an option. There is no way I am pushing it up the hill loaded with logs and I'm not asking Kev to do it either. We really need to purchase a four wheeler and small trailer to move wood and rocks around. As for now we will throw them as close to the road as possible and load them into the back of the truck. I have a couple of decorating decisions to make. The top of the hutch fell off during the move. So we have just been using the bottom part as a buffet. When my aunt was up last weekend she...

Delicious Bacon

A friend of mine introduced me to bacon jam. I know right. What the heck that? It's OH MY GOD delicious! I googled a couple of recipes and settled on this one . I want to try this one too. This is what you will need along with a pound of cooked bacon. I added red pepper flaked to give mine a little kick. Caramelize the onions and garlic and add the other ingredients. Bring to a boil and ten add the bacon. Let simmer for a few hours or until it thickens. I put mine a in couple of jars. It will keep for a month in the fridge. I grilled hamburgers and we slathered it on them. I will be making more! I put it on my breakfast sandwich this morning. YUM!

Kiss Me I'm Irish

So I played hookie yesterday. My college roommate has lived abroad since graduate school, so we rarely get to see each other. However, she does come through the states at least once a year. We always try to see each other someway or somehow. Sometimes it's just a passing through (Missouri to Texas) lunch, sometimes it's a day or two. Today we enjoyed a two and a half hour lunch and lots of chatting. You know a great friend when you can not see each other for months and pick up like you talked just yesterday. Hopefully we will be able to plan a trip to Malaysia before they move again. In honor of St. Paddy's Day I cooked an irish dinner. This year I made Shepard's Pie and cabbage. I've never even eaten Shepard's Pie. I found a couple of recipes on Pinterest and tried one out. It was really good. Next time I will put a little more spice. You start by browning the ground beef in a skillet and adding onions, garlic, paprika, and thyme. When that is cooked ...

Red Beans and Rice

My grandmother's health has declined in the last few years. A couple of years ago my mom asked me to make my grandmother's Red Beans and Rice for a family gathering.  Recipe out of Southern Accent cookbook All of the ingredients. (Notice the medal display project in the background.) She always used sausage instead of the ham the recipe calls for. I made a huge pot Sunday because dad was going to come up and I was going to send some home for mom. However, he couldn't come because of the weather, so we ate on it for a few days and I froze the rest.
