An Experiment with Pork Chops and Pineapple

Tonight I decided to create a stuffed pork chop. I had a fresh pineapple that needed to be used and thought that making a cream cheese stuffing would be delicious. I cut up half a jalapeƱo pepper, a small red bell pepper, and a couple of handfuls of pineapple.

I mixed it with Parsley flakes ( I really wanted to use Cilantro, but I didn't have any.) Cumin, Chipotle Chili Pepper, and cream cheese. I have found this cream cheese Greek yogurt blend that I LOVE!
I don't usually measure when I cook. Only when baking. Anyways. I think next time I won't use as much cream cheese. It was a tad bit runny.
We intended on grilling, but a storm blew in and it was raining too hard.
So, I whipped out the grill pan. As you can see, the filling ran out some.
The finished product.
Will I make it again? Probably so. I don't usually cook the same things every week, but I'm sure it will come around again. When it does, I will do a few things differently. I know I don't want to put as much cream cheese or chipotle powder in it. You never know with me. I hardly ever follow a recipe to a tee (Again, except with baking. It's a science. You can mess so shit up if you don't). I add or substitute all the time. That's what makes cooking so much fun.

The Crud

I feel like crud! I've blown my nose so much this weekend that my face is raw and red. I can't imagine how I have this much snot in me. Anyways. I didn't get my Thursday 3 miler in or my 9 mile long run this weekend. How can I run when I can't freaking breathe?!? I've been taking medicine and using my Nettie Pot, so here's hoping I feel like running towards the end of this week. So glad this is a short work week and a field trip on Wednesday. I NEED a break!!

Ballyseede Castle

Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. The castle has 23 en-suite bedrooms and 3 beautiful private rooms complimented by enchanting formal gardens. To read about the history of the castle click here. We stayed in the Coghill room.   We had a nice view of the gardens. Here are other pictures from inside the castle. We had to have our picture made with the knights.   We Googled and found a restaurant in town that was supposed to be delicious. It was nestled on the shore overlooking the bay. We arrived about 5:30 and watched the sunset. The food was fabulous, however the service was not. ...

Winter Weather Cancels Marathon

This weekend was supposed to be the St. Jude Marathon in Memphis. I signed up back in June and reserved my hotel. However, mother nature had other plans. We had a round of bad winter weather that left roads iced over for several days, so they ended up canceling the race. I checked and luckily my hotel will refund me my money, while others are not. Now, I was going to complete this race, but had I trained for it? No. I've been way too busy the past few months to take hours out of my dad and weekend to run. I had a house to finish and move into and a wedding to plan and attend. Anyways. I'm thinking about running the Nashville one in April. We will see. On another note the winter weather had us trapped on our hill for four days, before the temperatures reached 32 and the ice could melt some. Kev and I definitely enjoyed spending some quality time together and had a blast sledding.
