Kiss Me I'm Irish

Yesterday, we celebrated our St. Patty's Day low key. We had plans to go to the horse races, but it was cold and rainy so we decided against that idea. We slept in, or should I say laid in bed talking and surfing the The World Wide Web for house ideas. Kev finally got up and made green pancakes.
I worked on some lesson plans (Mapped out the rest of the year! Only 10 more weeks.) while he switched out our beds. My terrible 11 year old bed is now at his house and his wonderful hardly ever been slept on bed is here!

We watched a very cute movie, Here Comes the Boom and I cooked an Irish dinner.
I came across a recipe for Dublin Coddle while searching for Irish recipes. It requires very minimal ingredients; onion, potato, irish sausage, bacon, pepper, and parsley.

I couldn't find Irish sausage so I used these.
You layer everything making sure to season each layer with pepper and parsley. Pour bullion flavored boiling water over it and bake it at 300 for several hours.
I even cooked it in my new green casserole dish.
It turned out very flavorful and was yummy. Will definitely make this again.

Next year we will be in Ireland celebrating  St. Patrick's Day!!!!!

And of course Kev made drinks.

Ballyseede Castle

Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. The castle has 23 en-suite bedrooms and 3 beautiful private rooms complimented by enchanting formal gardens. To read about the history of the castle click here. We stayed in the Coghill room.   We had a nice view of the gardens. Here are other pictures from inside the castle. We had to have our picture made with the knights.   We Googled and found a restaurant in town that was supposed to be delicious. It was nestled on the shore overlooking the bay. We arrived about 5:30 and watched the sunset. The food was fabulous, however the service was not. ...

Winter Weather Cancels Marathon

This weekend was supposed to be the St. Jude Marathon in Memphis. I signed up back in June and reserved my hotel. However, mother nature had other plans. We had a round of bad winter weather that left roads iced over for several days, so they ended up canceling the race. I checked and luckily my hotel will refund me my money, while others are not. Now, I was going to complete this race, but had I trained for it? No. I've been way too busy the past few months to take hours out of my dad and weekend to run. I had a house to finish and move into and a wedding to plan and attend. Anyways. I'm thinking about running the Nashville one in April. We will see. On another note the winter weather had us trapped on our hill for four days, before the temperatures reached 32 and the ice could melt some. Kev and I definitely enjoyed spending some quality time together and had a blast sledding.

Inspired by Pinterest

I've been wanting to try these Chicken Lasagna Roll-ups I found on Pinterest. Since Kev's been working out of town, I figured it would be a great dish for this week. I could keep some and he could take the rest with him. (I also made Mexican Cornbread too.) Eating out every meal gets old. Anyways. Here is the original recipe. I changed it up some. I mixed together 15 oz. ricotta, 1 cup mozzarella cheese, egg, thawed frozen spinach (squeeze water out of it), and chicken (I always use a rotisserie chicken). Seasoned it with salt, pepper, garlic, and a little Italian seasoning. I never measure, just add a palmful until it tastes like I want it to.  Mixture I grabbed a handful of the mixture and spread it onto the noodle and rolled it up. Leave a little space at the end so the mixture doesn't gush out when you roll it up. Once all of them are made, I poured the  tomato sauce  I made yesterday over them. I added a little water to my sauce to thin it o...
