My Garden and Some New Recipes

Tuesday after summer school I ran to the store to pick up a few groceries and get fruit for jam. I tried a new strawberry jam recipe this year. It uses honey instead of refined sugar and apple instead of pectin. I wanted to make an organic real food version. It is delicious!!

While the jam was cooking down I tried a new recipe for dinner, BBQ Spaghetti. I used the BBQ sauce I made. It turned out pretty good. Next time I want just a little more spice.

I've got baby cucumbers and okra growing in the garden. I can't wait for next years garden. I have so many things I want to do differently and plant more of. This year was a trial year and I didn't want to spend tons of money if everything was going to die, but it hasn't so I'm excited for more next year.
Wednesday night I went to dinner with two friends from college. They are sorority sisters of mine and we try to get together every other month. We tried a new place in town called Heights Taco and Tamale. It was awesome!! I had tamales and a Delta Mule. The Delta Mule is made with ginger beer and brought make memories of sailing the BVI since we drank lots of rum with ginger beer on that trip.

Ballyseede Castle

   Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. The castle has 23 en-suite bedrooms and 3 beautiful private rooms complimented by enchanting formal gardens. To read about the history of the castle click here. We had to have our picture made with the knights.   We Googled and found a restaurant in town that was supposed to be delicious. It was nestled on the shore overlooking the bay. Pool Time!

We spent the weekend at our friends' pool. We took the dogs with us Sunday so they could have a play date. M and B have to pit bulls that are so sweet. Nahla, the youngest one, loves to play! They were also puppy sitting the cutest beagle ever!  They absolutely love going places! They were waiting in the car while I was loading our things.  I've never been able to get Hatfield in the pool, but Lilly loves it. She started off just sitting on the steps and one day she just jumped in. So, now she jumps in every now and then to cool off. Kev mixed up refreshing peach mojitos (I guess I've had major peach craving lately) this weekend. I'd share the recipe but that's his job. I never really know what all goes into what I'm drinking. I just know it's delicious! 

Football Merchandise

It's football season and Walmart has all their Razorback merchandise out. I was browsing the aisle the other day and saw these. I immediately thought whiskey! A great way to sneak liquor into the stadium. Of course the back says intended for water only. Yeah right! No one looks at this and says water.
