Canning, Projects, Cooking, and Shopping

I got a bag of corn Saturday. A bag has somewhere between 80-90 ears. I usually use half of them for making corn relish. They other half goes in the freezer. Sunday morning I went to the store to get the other ingredients needed. My friend gave me more cucumbers Friday night, so I wanted to make bread and butter pickles too.  I have been busy canning all summer and I love it!!
Sunday night once it cooled off, I tackled the garage door project. I found a link on Pinterest that showed how to use gel stain to redo your garage door so it looks like wood. I bough some a few weeks ago and have just been waiting until I had some time.
I love the way it looks. I didn't take a before picture and don't feel like digging through albums looking for one. Before it was lighter brown and very dull. It looked like a regular metal garage door. I have carriage door handles and brackets to put on it once I get on the clear coat.

I've been wanting new swim suits all summer and since we are going to the beach next week I went to Dillard's to see what they had left. I found these two. I also bought this really cute black top to go with some black bottoms I already have.
We have been enjoying crest veggies from our garden and my friend's garden. Monday night I made stuffed bell peppers and grilled squash.
Tuesday morning I decide to clean out the cabinets under the TV. We've added more speakers and wire and the subwoofer has been sitting out on the floor for several weeks. I have way too many glass vases that I never use.
I took everything out of the cabinets and started from scratch. That has been my method of cleaning since I was little. Here is the end result. The subwoofer has a new home!!
Perla watched the bird all morning.

Ballyseede Castle

Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. The castle has 23 en-suite bedrooms and 3 beautiful private rooms complimented by enchanting formal gardens. To read about the history of the castle click here. We stayed in the Coghill room.   We had a nice view of the gardens. Here are other pictures from inside the castle. We had to have our picture made with the knights.   We Googled and found a restaurant in town that was supposed to be delicious. It was nestled on the shore overlooking the bay. We arrived about 5:30 and watched the sunset. The food was fabulous, however the service was not. ...

Winter Weather Cancels Marathon

This weekend was supposed to be the St. Jude Marathon in Memphis. I signed up back in June and reserved my hotel. However, mother nature had other plans. We had a round of bad winter weather that left roads iced over for several days, so they ended up canceling the race. I checked and luckily my hotel will refund me my money, while others are not. Now, I was going to complete this race, but had I trained for it? No. I've been way too busy the past few months to take hours out of my dad and weekend to run. I had a house to finish and move into and a wedding to plan and attend. Anyways. I'm thinking about running the Nashville one in April. We will see. On another note the winter weather had us trapped on our hill for four days, before the temperatures reached 32 and the ice could melt some. Kev and I definitely enjoyed spending some quality time together and had a blast sledding.

Power Outage

Christmas Day we had lots of ice topped off with snow. Our power went out about 4:00 that afternoon. Luckily, I had already made a huge pot of chili. About two hours later, it came back on just long enough for us to eat dinner and shower (since I have a well, I don't get water when there's not electricity). By 10:00 it was out again and that's the last time we had power. I have a fireplace so keeping warm wasn't a problem. Kev split some wood and we were good to go. I pulled the camping cookware down from the attic. I cooked sausage, eggs, and toast for breakfast.  Warmed chili up for lunch. And made grilled chicken and cheese sandwiches for dinner.  I even pulled some cookie dough from the freezer and grilled cookie dough. We had to flip them like pancakes to cook them thoroughly, but they we delicious.  After sleeping on the mattress in front if the fireplace and still no power, we got the ok from his dad to bring all the animals out to his land....
