Rant!

I love shopping at Victoria's Secret! Their bras fit me the best for my size. Anyways, they always send me the free panty and $10 off bra coupons. And I always use them. (Bras and panties are one of my obsessions. The others are shoes, handbags, and jewelry, but that's another post.) It frustrates the hell out of me that I can't use them online! It's not the 20 minute drive that keeps me from wanting to go to the actual store, it's the fact that they NEVER have a good selection in my size. So. I'm always forced to get a color or pattern that was not my first or even second choice. I would probably spend more money if they let me use my coupons online. Knowing me I would go ahead and buy two bras or either make sure I ordered all the color/patterns of panties that match the chosen bra. Anyways that's my rant for today.

Ballyseede Castle

   Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. The castle has 23 en-suite bedrooms and 3 beautiful private rooms complimented by enchanting formal gardens. To read about the history of the castle click here. Winter Weather Cancels Marathon

This weekend was supposed to be the St. Jude Marathon in Memphis. I signed up back in June and reserved my hotel. However, mother nature had other plans. We had a round of bad winter weather that left roads iced over for several days, so they ended up canceling the race. I checked and luckily my hotel will refund me my money, while others are not. Now, I was going to complete this race, but had I trained for it? No. I've been way too busy the past few months to take hours out of my dad and weekend to run. I had a house to finish and move into and a wedding to plan and attend. Anyways. I'm thinking about running the Nashville one in April. We will see. On another note the winter weather had us trapped on our hill for four days, before the temperatures reached 32 and the ice could melt some. Kev and I definitely enjoyed spending some quality time together and had a blast sledding.

I've been wanting to try these Chicken Lasagna Roll-ups I found on Pinterest. Since Kev's been working out of town, I figured it would be a great dish for this week. I could keep some and he could take the rest with him. (I also made Mexican Cornbread too.) Eating out every meal gets old. Anyways. Here is the original recipe. I changed it up some. I mixed together 15 oz. ricotta, 1 cup mozzarella cheese, egg, thawed frozen spinach (squeeze water out of it), and chicken (I always use a rotisserie chicken). Seasoned it with salt, pepper, garlic, and a little Italian seasoning. I never measure, just add a palmful until it tastes like I want it to.  Mixture I grabbed a handful of the mixture and spread it onto the noodle and rolled it up. Leave a little space at the end so the mixture doesn't gush out when you roll it up. Once all of them are made, I poured the  tomato sauce  I made yesterday over them.
