Perla Kitty

This is Perla Kitty. She is definitely one of a kind. I'm not a cat person. I've never liked cats nor had the desire to own a cat. So I'm sure you're wondering why I now own a cat. My ex-fiance did love cats. He had two Tombo and Goose. The summer of '09 Tombo aka Tommy  disappeared. We looked everywhere for him. Anyways, Perla was his/our replacement. Yes. I know you can NEVER "replace" a beloved pet but Goose was getting lonely. We adopted her when she was six weeks old from Petsmart.


She loved playing outside as a kitten but of course the ex rarely let her because he was worried she'd disappear too.


Hiding out in the plant. She was such a playful kitten. We even taught her how to fetch little toy mice.


A year late we split and the cats went with him. Another year later tragedy happened and  now I have Perla. I didn't want anyone else to have her. She was technically my cat too.

This is her now. (She is three years old this summer.) I had this fabulous idea this past winter. Puzzles. Kev and I bought two. The first one was only 1,000 pieces and we had the whole thing together in 2 days. This was 2,000 pieces. No big deal. Right? I spent hours, days, weeks trying to place each piece in its spot. As you can see it took the dining room table and a card table to spread all the pieces out. Anyways, Perla loved to sit in the box. I would make her get down but the next time I walked by she was in the same place. By the way... I never finished this puzzle! My OCD usually forces me to want to finish but on this one I gave up. The first 1,000 were easy. They had lots of color variation and patterns to match. The last 1,000 were either blue, white, or green with VERY little color variation.


Perla finds strange places to rest. I left the cabinet open one day and this is what I found.

She still loves being outside and I let her out. It makes her happy and I don't have to clean the litter box very often. One day I left the car door open while I was bringing in groceries. She wanted to check out the inside.


Like I mentioned before, she loves to play with Lilly and lets Lilly chase her around. Here's a short video Kev captured one night in the kitchen.

Ballyseede Castle

   Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. The castle has 23 en-suite bedrooms and 3 beautiful private rooms complimented by enchanting formal gardens. To read about the history of the castle click here. Winter Weather Cancels Marathon

This weekend was supposed to be the St. Jude Marathon in Memphis. I signed up back in June and reserved my hotel. However, mother nature had other plans. We had a round of bad winter weather that left roads iced over for several days, so they ended up canceling the race. I checked and luckily my hotel will refund me my money, while others are not. Now, I was going to complete this race, but had I trained for it? No. I've been way too busy the past few months to take hours out of my dad and weekend to run. I had a house to finish and move into and a wedding to plan and attend. Anyways. I'm thinking about running the Nashville one in April. We will see. On another note the winter weather had us trapped on our hill for four days, before the temperatures reached 32 and the ice could melt some. Kev and I definitely enjoyed spending some quality time together and had a blast sledding.

Inspired by Pinterest

I've been wanting to try these Chicken Lasagna Roll-ups I found on Pinterest. Since Kev's been working out of town, I figured it would be a great dish for this week. I could keep some and he could take the rest with him. (I also made Mexican Cornbread too.) Eating out every meal gets old. Anyways. Here is the original recipe. I changed it up some. I mixed together 15 oz. ricotta, 1 cup mozzarella cheese, egg, thawed frozen spinach (squeeze water out of it), and chicken (I always use a rotisserie chicken). Seasoned it with salt, pepper, garlic, and a little Italian seasoning. I never measure, just add a palmful until it tastes like I want it to.  Mixture I grabbed a handful of the mixture and spread it onto the noodle and rolled it up. Leave a little space at the end so the mixture doesn't gush out when you roll it up. Once all of them are made, I poured the  tomato sauce  I made yesterday over them.
