Peaches!

My parents have two peach trees in the backyard and the squirrels ALWAYS get them before they're ripe enough to pick. This year we won! My dad decided to shoot them! So, low and behold we have peaches! LOTS and LOTS of peaches!

This is the first bag I picked standing in the scorching 107 degree sun! I've made peach cobbler, peach smoothies, put several bags in the freezer, and of course I shared with friends. They were sooooo yummy!

This is the second batch I picked. Some of them were a little yucky but I used all that I could and tossed the rest. I spent a couple of hours peeling and cutting them up until I had this.

When I plugged the food processor up to chop them up (because who wants to chop nine cups of sticky, slimy peaches by hand?) nothing happened! I messed and messed with it. Still nothing. So. I went to plan B. The Blender. Failed again. I guess they're really only made for liquids and to chop ice. I moved on to plan C. The Pampered Chef hand chopper. Boy was it messy and sticky, but it did the job!

Simmering on the stove. The kitchen can get pretty steamy with water bath boiling along with the fruit. I just think of it as a steam facial. Aren't they good for your pores?

The finished product. Of course I had toast for breakfast this morning, so yummy!!

I enjoy making jam and canning other things each summer (I made 15 jars of corn relish last week). I remember helping by grandmother do this every summer as a child (they lived next door to me growing up). There are blackberries to be picked at my papaw's house, so that will be my next canning event. Kevin's been begging for blackberry cobbler too. It's his favorite!

The Crud

I feel like crud! I've blown my nose so much this weekend that my face is raw and red. I can't imagine how I have this much snot in me. Anyways. I didn't get my Thursday 3 miler in or my 9 mile long run this weekend. How can I run when I can't freaking breathe?!? I've been taking medicine and using my Nettie Pot, so here's hoping I feel like running towards the end of this week. So glad this is a short work week and a field trip on Wednesday. I NEED a break!!

Ballyseede Castle

Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. The castle has 23 en-suite bedrooms and 3 beautiful private rooms complimented by enchanting formal gardens. To read about the history of the castle click here. We stayed in the Coghill room.   We had a nice view of the gardens. Here are other pictures from inside the castle. We had to have our picture made with the knights.   We Googled and found a restaurant in town that was supposed to be delicious. It was nestled on the shore overlooking the bay. We arrived about 5:30 and watched the sunset. The food was fabulous, however the service was not. ...

Winter Weather Cancels Marathon

This weekend was supposed to be the St. Jude Marathon in Memphis. I signed up back in June and reserved my hotel. However, mother nature had other plans. We had a round of bad winter weather that left roads iced over for several days, so they ended up canceling the race. I checked and luckily my hotel will refund me my money, while others are not. Now, I was going to complete this race, but had I trained for it? No. I've been way too busy the past few months to take hours out of my dad and weekend to run. I had a house to finish and move into and a wedding to plan and attend. Anyways. I'm thinking about running the Nashville one in April. We will see. On another note the winter weather had us trapped on our hill for four days, before the temperatures reached 32 and the ice could melt some. Kev and I definitely enjoyed spending some quality time together and had a blast sledding.
