Dad added the mantle to the fireplace. I LOVE it!!

 Of course things got of schedule. The granite man took forever getting my granite ready. I don't know who was stressed out more my dad, my mom, or me. Anyways he finally got them in this weekend!! I took a peek yesterday after school.

Everyone will be back up Wednesday. The plumber will hook up the sinks and install the faucets. Spencer will finish the shower tile and start the backsplash and dog shower. The cabinet man will be up to fix the shelving next to the fireplace, put on cabinet hardware, and make my appliance garage. Dad will put a coat of sealer on the back bedrooms and bathroom, install my closet rods, and any other things that need to be done. Heating and air people will be out to hook the unit up. Hopefully the well filter man will be there to put the filter on the well! He is the busiest person!!

I'm going over Thursday night to clean the rest of the floors really well, so dad can roll sealer on them while we are gone this weekend.

MONDAY IS MOVING DAY!! (crossing my fingers)

Ballyseede Castle

   Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. Winter Weather Cancels Marathon

This weekend was supposed to be the St. Jude Marathon in Memphis. I signed up back in June and reserved my hotel. However, mother nature had other plans. We had a round of bad winter weather that left roads iced over for several days, so they ended up canceling the race. I checked and luckily my hotel will refund me my money, while others are not. Now, I was going to complete this race, but had I trained for it? No. I've been way too busy the past few months to take hours out of my dad and weekend to run. I had a house to finish and move into and a wedding to plan and attend. Anyways. I'm thinking about running the Nashville one in April. We will see. On another note the winter weather had us trapped on our hill for four days, before the temperatures reached 32 and the ice could melt some. Kev and I definitely enjoyed spending some quality time together and had a blast sledding.

Inspired by Pinterest

I've been wanting to try these Chicken Lasagna Roll-ups I found on Pinterest. Since Kev's been working out of town, I figured it would be a great dish for this week. I could keep some and he could take the rest with him. (I also made Mexican Cornbread too.) Eating out every meal gets old. Anyways. Here is the original recipe. I changed it up some. I mixed together 15 oz. ricotta, 1 cup mozzarella cheese, egg, thawed frozen spinach (squeeze water out of it), and chicken (I always use a rotisserie chicken). Seasoned it with salt, pepper, garlic, and a little Italian seasoning. I never measure, just add a palmful until it tastes like I want it to.  Mixture I grabbed a handful of the mixture and spread it onto the noodle and rolled it up. Leave a little space at the end so the mixture doesn't gush out when you roll it up. Once all of them are made, I poured the  tomato sauce  I made yesterday over them.
