Workout Lapse

I've been wanting a weight stand and Kev got me one for my birthday. Don't they look pretty? Now we/I just need to get back into the groove. I ran regularly for about two weeks with no P90X. Last week I did NOTHING! Kev has been working til dark lately. In the winter that's only til 6:00 but this time of year it doesn't get dark til 8:00. Ugh!! Hopefully we will be able to get back into the swing of things and I can use my new grip pads. They are hanging out on top of my weights.

Ballyseede Castle

Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. The castle has 23 en-suite bedrooms and 3 beautiful private rooms complimented by enchanting formal gardens. To read about the history of the castle click here. We stayed in the Coghill room.   We had a nice view of the gardens. Here are other pictures from inside the castle. We had to have our picture made with the knights.   We Googled and found a restaurant in town that was supposed to be delicious. It was nestled on the shore overlooking the bay. We arrived about 5:30 and watched the sunset. The food was fabulous, however the service was not. ...

Power Outage

Christmas Day we had lots of ice topped off with snow. Our power went out about 4:00 that afternoon. Luckily, I had already made a huge pot of chili. About two hours later, it came back on just long enough for us to eat dinner and shower (since I have a well, I don't get water when there's not electricity). By 10:00 it was out again and that's the last time we had power. I have a fireplace so keeping warm wasn't a problem. Kev split some wood and we were good to go. I pulled the camping cookware down from the attic. I cooked sausage, eggs, and toast for breakfast.  Warmed chili up for lunch. And made grilled chicken and cheese sandwiches for dinner.  I even pulled some cookie dough from the freezer and grilled cookie dough. We had to flip them like pancakes to cook them thoroughly, but they we delicious.  After sleeping on the mattress in front if the fireplace and still no power, we got the ok from his dad to bring all the animals out to his land....

Inspired by Pinterest

I've been wanting to try these Chicken Lasagna Roll-ups I found on Pinterest. Since Kev's been working out of town, I figured it would be a great dish for this week. I could keep some and he could take the rest with him. (I also made Mexican Cornbread too.) Eating out every meal gets old. Anyways. Here is the original recipe. I changed it up some. I mixed together 15 oz. ricotta, 1 cup mozzarella cheese, egg, thawed frozen spinach (squeeze water out of it), and chicken (I always use a rotisserie chicken). Seasoned it with salt, pepper, garlic, and a little Italian seasoning. I never measure, just add a palmful until it tastes like I want it to.  Mixture I grabbed a handful of the mixture and spread it onto the noodle and rolled it up. Leave a little space at the end so the mixture doesn't gush out when you roll it up. Once all of them are made, I poured the  tomato sauce  I made yesterday over them. I added a little water to my sauce to thin it o...
