Mexican Cornbread

I have a recipe for you today. Mexican Cornbread. We ate it a lot growing up. It was one of mom's go to meals. I was making it tonight and decided to take pictures so I could share it. There are two parts.
You start off browning about a pound of hamburger meat (I used turkey this time). Drain any grease and add a can of Rotel. ( I used fire roasted tomatoes because that's all I had.) Add a little salt and pepper.
The corn bread mix is
1 1/2 cups of corn meal mix
1/2 cup of oil
1 cup milk
2 eggs
1 can creamed corn
A few jalapeƱos
Mix together. Should be the consistency of cake batter.
Pour half of the corn bread mix into a greased pan. (I used a square pan this time but I usually use a rectangular one. It was very very close to overflowing today.) Anyways. Spread the meat mixture over the cornbread and then top it with cheese. (My favorite is a hot cheese.) Finally, pour the rest of the cornbread mix. Bake at 350 for 45 minutes.
I didn't get a final picture. Oh well, you know what cornbread looks like when it's done. Nice and golden brown.

Ballyseede Castle

Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. The castle has 23 en-suite bedrooms and 3 beautiful private rooms complimented by enchanting formal gardens. To read about the history of the castle click here. We stayed in the Coghill room.   We had a nice view of the gardens. Here are other pictures from inside the castle. We had to have our picture made with the knights.   We Googled and found a restaurant in town that was supposed to be delicious. It was nestled on the shore overlooking the bay. We arrived about 5:30 and watched the sunset. The food was fabulous, however the service was not. ...

Winter Weather Cancels Marathon

This weekend was supposed to be the St. Jude Marathon in Memphis. I signed up back in June and reserved my hotel. However, mother nature had other plans. We had a round of bad winter weather that left roads iced over for several days, so they ended up canceling the race. I checked and luckily my hotel will refund me my money, while others are not. Now, I was going to complete this race, but had I trained for it? No. I've been way too busy the past few months to take hours out of my dad and weekend to run. I had a house to finish and move into and a wedding to plan and attend. Anyways. I'm thinking about running the Nashville one in April. We will see. On another note the winter weather had us trapped on our hill for four days, before the temperatures reached 32 and the ice could melt some. Kev and I definitely enjoyed spending some quality time together and had a blast sledding.

Power Outage

Christmas Day we had lots of ice topped off with snow. Our power went out about 4:00 that afternoon. Luckily, I had already made a huge pot of chili. About two hours later, it came back on just long enough for us to eat dinner and shower (since I have a well, I don't get water when there's not electricity). By 10:00 it was out again and that's the last time we had power. I have a fireplace so keeping warm wasn't a problem. Kev split some wood and we were good to go. I pulled the camping cookware down from the attic. I cooked sausage, eggs, and toast for breakfast.  Warmed chili up for lunch. And made grilled chicken and cheese sandwiches for dinner.  I even pulled some cookie dough from the freezer and grilled cookie dough. We had to flip them like pancakes to cook them thoroughly, but they we delicious.  After sleeping on the mattress in front if the fireplace and still no power, we got the ok from his dad to bring all the animals out to his land....
