Pull Apart Pizza Bread

I've been obsessed with making homemade pizzas and finding other things to do with refrigerated pizza dough. I came across this Pull Apart Pizza Bread recipe on Pinterest. Last night I decided to make it. The original recipe just calls for marinara, cheese, and pepperoni. I had mushrooms onions, and Italian deer sausage I wanted to use. I love the fact that deer meat is so lean. Notice there isn't any grease in the pan. That means it's way healthier than pork sausage.

I browned the sausage and added onions, peppers, and mushrooms and cooked until they were soft.

Then I floured my cutting board and laid out the pizza dough.

I spread marinara sauce on first. I just used some out of a jar (I usually make my own). Anyways... Top that with the sausage mixture, pepperoni, and mozzarella cheese.

You then cut it into small pieces and stack them on top of each other. I did about three pieces at a time. This got extremely messy. Stack them sideways in a bread dish.

It said to cook for 25 minutes but mine was still gooey, so I cooked it about 10 more minutes. I served it with extra marinara. It turned out pretty good and I will probably make it again, even though it was MESSY.

Ballyseede Castle

Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. The castle has 23 en-suite bedrooms and 3 beautiful private rooms complimented by enchanting formal gardens. To read about the history of the castle click here. We stayed in the Coghill room.   We had a nice view of the gardens. Here are other pictures from inside the castle. We had to have our picture made with the knights.   We Googled and found a restaurant in town that was supposed to be delicious. It was nestled on the shore overlooking the bay. We arrived about 5:30 and watched the sunset. The food was fabulous, however the service was not. ...

Winter Weather Cancels Marathon

This weekend was supposed to be the St. Jude Marathon in Memphis. I signed up back in June and reserved my hotel. However, mother nature had other plans. We had a round of bad winter weather that left roads iced over for several days, so they ended up canceling the race. I checked and luckily my hotel will refund me my money, while others are not. Now, I was going to complete this race, but had I trained for it? No. I've been way too busy the past few months to take hours out of my dad and weekend to run. I had a house to finish and move into and a wedding to plan and attend. Anyways. I'm thinking about running the Nashville one in April. We will see. On another note the winter weather had us trapped on our hill for four days, before the temperatures reached 32 and the ice could melt some. Kev and I definitely enjoyed spending some quality time together and had a blast sledding.

Power Outage

Christmas Day we had lots of ice topped off with snow. Our power went out about 4:00 that afternoon. Luckily, I had already made a huge pot of chili. About two hours later, it came back on just long enough for us to eat dinner and shower (since I have a well, I don't get water when there's not electricity). By 10:00 it was out again and that's the last time we had power. I have a fireplace so keeping warm wasn't a problem. Kev split some wood and we were good to go. I pulled the camping cookware down from the attic. I cooked sausage, eggs, and toast for breakfast.  Warmed chili up for lunch. And made grilled chicken and cheese sandwiches for dinner.  I even pulled some cookie dough from the freezer and grilled cookie dough. We had to flip them like pancakes to cook them thoroughly, but they we delicious.  After sleeping on the mattress in front if the fireplace and still no power, we got the ok from his dad to bring all the animals out to his land....
