Traveling

This weekend we loaded and up and went to visit Kev. I spent the good part of Friday morning cooking our meals for the weekend/week.


Red sauce chicken enchiladas. Personally I've always preferred cheesy enchiladas, but I came across this recipe for on the Skinnytaste Blog. They are very spicy, flavorful and surprisingly low-fat. 


Poppy Seed Chicken. My best friend introduced me to this casserole (her mom makes it). This is the first time I've ever made it and used a couple of recipes I found online. It's so simple and I only hope it tastes as yummy as her mom's. Basically you mix two cups cooked chicken (again I always use rotisserie), a can of cream of mushroom soup, 16 ounces of sour cream (and again I used nonfat creek yogurt-Fage is my favorite), 3 teaspoons of poppy seeds, salt and pepper, and a small package of cooked egg noodles. For the topping melt 1/4 cup of butter and combine with about 30 crushed Ritz Crackers. Bake at 350 for 30 minutes and wah la!

My third dish was meatloaf and mashed potatoes. Kev's favorite! I've tried several recipes and have found a Weight Watcher (My mom bought me a Weight Watcher cookbook for Christmas last year.) spicy meatloaf recipe that's yummy and again low fat.


Loaded up and ready to go. I couldn't take both animals, so Hatfield stayed at our friend's house to play with their dogs (He was SOOOOO ready to play. Lilly got spayed Monday so there hasn't been ANY playing the past week.) and Lilly came with me. Most hotels only allow small dogs and she is the smallest of my two. That is if you consider 62 pounds small! She slept most of the way and we stopped a few times to take a walk. Overall it was a great drive!

The Crud

I feel like crud! I've blown my nose so much this weekend that my face is raw and red. I can't imagine how I have this much snot in me. Anyways. I didn't get my Thursday 3 miler in or my 9 mile long run this weekend. How can I run when I can't freaking breathe?!? I've been taking medicine and using my Nettie Pot, so here's hoping I feel like running towards the end of this week. So glad this is a short work week and a field trip on Wednesday. I NEED a break!!

Ballyseede Castle

   Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. The castle has 23 en-suite bedrooms and 3 beautiful private rooms complimented by enchanting formal gardens. To read about the history of the castle click here. We stayed in the Coghill room.   We had a nice view of the gardens. Here are other pictures from inside the castle. We had to have our picture made with the knights.   We Googled and found a restaurant in town that was supposed to be delicious. It was nestled on the shore overlooking the bay. We arrived about 5:30 and watched the sunset. The food was fabulous, however the service was not. ...

Winter Weather Cancels Marathon

This weekend was supposed to be the St. Jude Marathon in Memphis. I signed up back in June and reserved my hotel. However, mother nature had other plans. We had a round of bad winter weather that left roads iced over for several days, so they ended up canceling the race. I checked and luckily my hotel will refund me my money, while others are not. Now, I was going to complete this race, but had I trained for it? No. I've been way too busy the past few months to take hours out of my dad and weekend to run. I had a house to finish and move into and a wedding to plan and attend. Anyways. I'm thinking about running the Nashville one in April. We will see. On another note the winter weather had us trapped on our hill for four days, before the temperatures reached 32 and the ice could melt some. Kev and I definitely enjoyed spending some quality time together and had a blast sledding.
