Tomato Sauce

I've been making my own pasta sauce for years now. It's super easy and way better and cheaper than the stuff you buy in the jars.

Here's how I do it. Sauté 5-6 gloves garlic in olive oil. I use a bag of the frozen three pepper and onion blend. (I keep these on hand all the time.) Once those soften, I add 2 cans of fire roasted tomatoes and a large can tomato sauce (add more if you want a thinner sauce). Then I add lots of Italian seasoning, salt, and pepper. Today I added red pepper flakes too. Let it simmer. It makes about 2 quarts. I usually freeze some for another day.

I'm using this tomato sauce for chicken lasagna roll-ups. I've seen the recipe on Pinterest. I'll let you know how it turns out.

   Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. We had to have our picture made with the knights.   We Googled and found a restaurant in town that was supposed to be delicious. It was nestled on the shore overlooking the bay. A Sunday Swim

Sunday afternoon we decided to take a drive. When it was time for the dogs to get in their pen, Hatfield refused. He just stood at the car door. He wanted to go to. So we loaded them up and headed out. Our drive took us to a small lake about 20 minutes always. I didn't even know it existed. Anyways, we let the dogs swim. They loved it! Watch Lilly leap like a dolphin. Hilarious! Or at least it is to us.
