Dinner and Dancing

I choose to do a chili bar for dinner. I figured it was perfect for fall and who doesn't like chili. the cater made regular chili, white bean chicken chili, and vegetarian chili. All the regular chili toppings were available along with crackers and Fritos. We also served little slider sandwiches, just in case someone didn't like chili, and fresh fruit.



 After dinner was the cutting of the cake. We had both agreed not to do any cake in the face smashing.



 Then first dances…
I was nervous about our first dance. We danced to Michael Buble`'s Everything which is kind of fast and we had not practiced! Nobody fell so I count it as a success.
Dad and I danced to Edwin McCain's Walk with You. Let me just say it's a tear jerker. I had to listen to it over and over the months leading up to the wedding, so that I didn't cry like a baby. Mom and I tried to get dad to listen to it. We even played it for him. Well he didn't really listen and throughout the whole song he had tears rolling down his cheeks and a smile on his face.

The set up. Cody brought everything with him, even his stage lights. Notice the dance floor in the background. It didn't get used mush since it wasn't under the tent. 
Once the rain stopped a few of utilized it. Dancing with my brother. He jerked me around so hard he almost pulled a boob out.
Dancing with the flower girl. She danced the WHOLE time. It was so cute, she would do exactly what I did. She loved holding her dress out and spinning.
 These next pictures are a series of pictures with my brother. You have to understand that my brother has always loved to pester me! He is known for taking food off of my plate and eating it. Well nothing chances. We are grown adults and he still loves to pester me and steal my food. Before these pictures, I had made a S'more and was talking to some friends when he came up behind me and ate it right out of my hand. He finally made me another one and that's where the pictures start. He tried to force it in my mouth.

Ballyseede Castle

   Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. Winter Weather Cancels Marathon

This weekend was supposed to be the St. Jude Marathon in Memphis. I signed up back in June and reserved my hotel. However, mother nature had other plans. We had a round of bad winter weather that left roads iced over for several days, so they ended up canceling the race. I checked and luckily my hotel will refund me my money, while others are not. Now, I was going to complete this race, but had I trained for it? No. I've been way too busy the past few months to take hours out of my dad and weekend to run. I had a house to finish and move into and a wedding to plan and attend. Anyways. I'm thinking about running the Nashville one in April. We will see. On another note the winter weather had us trapped on our hill for four days, before the temperatures reached 32 and the ice could melt some. Kev and I definitely enjoyed spending some quality time together and had a blast sledding.

Inspired by Pinterest

I've been wanting to try these Chicken Lasagna Roll-ups I found on Pinterest. Since Kev's been working out of town, I figured it would be a great dish for this week. I could keep some and he could take the rest with him. (I also made Mexican Cornbread too.) Eating out every meal gets old. Anyways. Here is the original recipe. I changed it up some. I mixed together 15 oz. ricotta, 1 cup mozzarella cheese, egg, thawed frozen spinach (squeeze water out of it), and chicken (I always use a rotisserie chicken). Seasoned it with salt, pepper, garlic, and a little Italian seasoning. I never measure, just add a palmful until it tastes like I want it to.  Mixture I grabbed a handful of the mixture and spread it onto the noodle and rolled it up. Leave a little space at the end so the mixture doesn't gush out when you roll it up. Once all of them are made, I poured the  tomato sauce  I made yesterday over them.
