Out of the Ashes

These are some quotes that really spoke to me on Pinterest. I obviously didn't crop them and can't now, I could but it would be a process and I'm not willing to do that right now. I just want to get all of these drafts published.



I was going through some of Kev's old papers and found some drawings he made. I found this. I guess he never finished it but it was supposed to be a Phoenix.


I finished it with this quote, the date of his death, and his initials. My plan was to get it tattooed on my side. I never went though with that plan and I probably won't. I think I may clean it up a bit and blow it up and frame it. It is still special to me, but I just don't see myself getting another tattoo.

Ballyseede Castle

   Tralle was a good stopping point from Dingle to Doolin. When looking for places to stay I came across the Ballyseede Castle Hotel. It was a little pricey, but since we had such great deals on all of the other B&Bs, I splurged. It's one of the best known Castle Hotels in Ireland, has a history dating back to the 1590’s and sits on 30 acres of native woodlands. The castle has 23 en-suite bedrooms and 3 beautiful private rooms complimented by enchanting formal gardens. To read about the history of the castle click here. We stayed in the Coghill room.   We had a nice view of the gardens. Here are other pictures from inside the castle. We had to have our picture made with the knights.   We Googled and found a restaurant in town that was supposed to be delicious. It was nestled on the shore overlooking the bay. I've been wanting to try these Chicken Lasagna Roll-ups I found on Pinterest. Since Kev's been working out of town, I figured it would be a great dish for this week. I could keep some and he could take the rest with him. (I also made Mexican Cornbread too.) Eating out every meal gets old. Anyways. Here is the original recipe. I changed it up some. I mixed together 15 oz. ricotta, 1 cup mozzarella cheese, egg, thawed frozen spinach (squeeze water out of it), and chicken (I always use a rotisserie chicken). Seasoned it with salt, pepper, garlic, and a little Italian seasoning. I never measure, just add a palmful until it tastes like I want it to.  Mixture I grabbed a handful of the mixture and spread it onto the noodle and rolled it up. Leave a little space at the end so the mixture doesn't gush out when you roll it up. Once all of them are made, I poured the  tomato sauce  I made yesterday over them. Can't Wait to Finally Have a Garage!

This morning it was 28 degrees outside! I warmed my car up for 20 minutes and all the frost still wasn't off the windows. I can't wait til next winter when I will have a garage to park in. Not only for winter months but all months truly. In the fall I always get acorns and leaves stuck in my window. In the summer my car is always covered in bird poop and hot and in spring it's covered in pollen. Just one of the reasons I'm so excited about building a house. Having garage to park in!
